If you’re like me, you can always use a bit of inspiration when it comes to making meals and snacks for your family. I love to cook, but most times the hardest part is deciding what to make. There’s always the raging battle of do-I-cook-what-I-know-we-love or do-I-try-something-new-and-hope-its-delicious. More often than not these days, I’ve been sticking with the what-we-love category…with an occasional foray into trying something new. We joined a CSA for the summer this year, and while the majority of our bi-weekly boxes come stocked with the normal staples (tomatoes, squashes, corn, peppers), there have been a few new things thrown into the mix that made me search Pinterest and Google for new recipes. I feel like summertime cooking is a time of basic, simple suppers, and we’ve been doing a lot of grilling and easy preparations of the fresh produce we get.
Here’s another round up of some of the things I’ve been making in the kitchen lately::
these lemon butter green beans were so easy and fresh
this corn salsa is a new staple for our weekly mexican night, but I recommend using fresh corn (and grill char it!) versus canned/frozen corn
greek grilled chicken, garlic flatbreads, and tzatziki sauce…let the chicken marinade for at least a day for some really great flavor
i needed to use up an abundance of tomatoes a few weeks ago and made gazpacho for the first time…verdict? so good.
i used this recipe for marinating chicken kabobs and it’s seriously my new favorite
this is basically the only way we eat watermelon anymore
the simplest peach sorbet

that moroccan chilcken looks fantastic! my sister lived in morocco for a bit and i loved trying some of the recipes she brought back with her and how many fresh herbs and spices they used regularly…inspires me to use more fresh ingredients in lots of dishes! 🙂
